I LOVE breakfast food! Whenever I’m craving something yummy, it’s always breakfast food. Unfortunately, typical breakfast foods contain a LOT of gluten and a LOT of dairy. They also contain way more sugar than we should be eating in a day, let alone 1 meal!
One of my favorite breakfast foods is pancakes however, typical pancakes contain gluten, dairy, and added refined sugar…definitely not the best way to start your day!
A lot of gluten free pancake recipes I’ve found and tried either required a lot of ingredients that I didn’t have in my kitchen, so I’d have to make a special grocery trip, or they just didn’t taste very good.
One day, I had some really ripe bananas that I didn’t want to waste, so I threw this recipe together and it worked out! Now whenever I have extra ripe bananas, I make these pancakes and store them in the fridge. They’re great for breakfast or a sweet, healthy snack!
Also, I’m a crazy dog mom and I love sharing food with my Miss Cammie whenever I can. These pancakes are dog friendly too! Miss Cammie gets so excited for her pancakes!

So without further ado, here is the recipe!

Ingredients:
1 Ripe Banana
⅔ Cup Gluten Free Oat Flour (if you don’t have oat flour, you can make some by putting oats in the blender to form a flour)
⅔ Cup Nut Milk of choice (I use Elmhurst Oat Milk or Elmhurst Almond Milk. Make sure you check the ingredients in your nut milk before using it! Check out this IG post for more info!)
1 tsp Baking Powder
Instructions:
Combine ingredients in a medium sized mixing bowl then cook in a skillet just like you would any other pancake!
One tip I have is to cook it a little longer than you would think on the first side. Because there is no egg or gluten, the batter does pull apart easier which makes them a little difficult to flip. If you cook it a little longer, it’s MUCH easier to flip! Just don’t burn it!
Sometimes I like to add blueberries! If you add blueberries, chocolate ships, or anything of the like, don’t add it into the batter. When the pancake has cooked for a little bit on the first side, sprinkle them on top before flipping!
Let me know if you give these a try!
